Sparkly White Chocolate Lemon Truffles ~ How Sweet It Is

From my gal over at howsweetitis, here is one of her delicious creations.  These look divine!

Ingredients:

10 ounces high-quality white chocolate, chopped
2 tablespoons unsalted butter
6 tablespoons heavy cream
1 teaspoon corn syrup
1 drop lemon extract or pure lemon oil
the zest of half a lemon
white sanding sugar for coating

Directions:

Add white chocolate and butter to a bowl, then microwave on medium power for 30 seconds. Stir a few times, then microwave for 20 more seconds.

Add heavy cream and corn syrup to a small saucepan and heat over medium heat just until bubbles appear on the edges. This will happen quickly! Immediately pour the cream over the melted chocolate and butter, stirring well for a few minutes until combined. Stir in the drop of lemon oil and lemon zest, mixing to combine. Place in the fridge (or even the freezer) for 1-2 hours.

Remove from fridge and scoop out teaspoon-size balls of chocolate with a melon scooper or small spoon. Roll them into balls and dip in the sanding sugar, coating completely. These hold up great at room temperature but I tend to store them in the fridge.

Santa’s Fairies Make Candy Cane Dust!

Candy Cane Dust.  Minty, pink fun!

Imagine, sprinkled on hot cocoa, coffee, ice cream, cuppycakes, candy.

Just take some peppermint candies or candy canes and crush them finely in a blender or food processor.  Just be sure to store in an airtight container so the dust does not stick together.

Egg’n’Grog

Holiday Eggnog (Spirited)

1 dozen eggs

1 pound powdered sugar

1/2 teaspoon salt

1/4 cup vanilla

8 cups evaporated milk

3 cups water

1 quart spiced rum (optional)

Nutmeg, to garnish

Beat eggs until light in color, gradually add sugar, salt and vanilla. Then add milk and water. Stir in rum (brandy, bourbon or rye may also be used). Cover the nog and ripen for 24 hours in the refrigerator. Stir again and garnish with whipped cream, a cinnamon stick and sprinkle with nutmeg.

If I could go back in time, when my grandparents were alive I would spend more time with them and get to know them better.  It’s amazing how sometimes our grandparents or even our own parents don’t think their lives in “the olden days” would interest us to talk about.  As I’ve found if you ask just questions, they are actually filled with fascinating stories about their younger lives, their childhoods, loves, interests and passions.

A lot of towns have cool shops that you can go into, pick out an unfinished  piece of pottery to paint.  It’s a lot of fun and it gives you a chance to be creative and whimsical and in the end you get a usable piece of artwork to keep!  It’s pretty affordable too.  It would be a super cool afternoon painting with your grammy!

Most older folks have pretty much all they really need.  One thing however I think they do enjoy receiving, are photos of family and friends.

A thoughtful way to give your grandmother a cherished family keepsake is a handcrafted scrapbook.

There are lovely scrap-booking tools now.  At Michael’s Crafts the other day I was perusing all of the beautiful accessories they carry, from gorgeous papers, interesting stickers, fancy scissors and more.

I think having a scrapbook of vintage photos or black and white photos would be extra special and so beautiful.  It’s easy to take digital photos and print them in black and white or sepia tone.  Add some incredible papers in a lovely album and you’ve created a very special memory for your grandmum.

Get decked out, put on your Sunday finest and start out your night at a delicious restaurant and then grab a fabulous live show. Whether it’s a musical, the ballet, symphony or a Shakespearean play; live shows are always a good time.  Just pick one you think she’ll enjoy.  There are always plenty going on around the holidays.  The Nutcracker is always a good choice!
